Oolong and White Tea
Oolong and White tea are made from the same tea leaves as Green tea and Black tea. The variation comes from the production methods rather than in the plant. Green tea is made from tea leaves that have been withered and dried but not fermented. Black tea is made from the same leaves but in between withering and drying is allowed to ferment naturally on a tile bed for about twelve hours. After this time the tea becomes chemically inert and changes colour.
Oolong tea and White tea are made using the same fermentation techniques but the leaves are only partly allowed to ferment. White tea is 20% fermented before drying halts the process and Oolong tea is 50% fermented before being dried. The technique produces teas with quite different qualities. Individual tea factories will use a variety of techniques, which they guard jealously, to fine tune the semi fermentation process.
Why bother? Well both White tea and Oolong tea have properties not found in either black or green tea. At Cotswold Tea we regard White tea as being both a healthy drink and a calming and relaxing one. Oolong tea on the other hand acts as a gentle stimulant and is a more invigorating drink.

Dear Customers
With this long dry spell we have had keeping hydrated is a big challenge but somehow tea always comes up to the mark, be it a rousing cup of Assam or a refreshing light cup of Darjeeling. I have been resting up on the deck of my narrow boat with many a cup of Darjeeling this last month in between packing the new teas like cazy of course!
As it comes arround to the summer holidays I know a number of you just can't go away without your own tea so make sure you get your order in before you set off for your well earned rest.
