Green Tea

Green tea is made from the same plant as black tea. The difference is that to make black tea the leaves are allowed to ferment and for green they are not fermented at all. Green tea was the first type of tea to be made. There are 2 Camellia Sinsensis varieties called Assamica and Sinsensis. The Assamica variety is best grown in tropical and sub tropical regions whilst the Sinsensis in cultivated in temperate regions as it can withstand temperatures down to -12C. It is the Sinsensis variety that is generally used to make green tea.

Green tea leaves are steamed at 95-100c for 30-45 seconds to inactivate the enzymes that cause fermentation. The steaming process means that the vitamins in the leaves are protected. The leaves are then rolled and dried. The leaves are then fired (roasted) and cut.

Green tea contains caffeine, polyphenols, theanine and vitamins. The green tea polyphenols slow down the oxidation of fats and oils i.e. they are anti-oxidants. Studies have indicated that the green tea polyphenols pick up the free radicals in the digestive system and stop them activating processes that damage cellular tissue. Some studies have indicated that green tea extract can neutralise the bacteria in the mouth that causes plaque and that it can also improve breath by its deodorising effect.

The teas all vary in flavour but have been selected so that the bitterness often associated with green tea is absent. Dear Customers

For a change some Good News! The Shops are OPEN and I am back in the office. My sister has had a wonderful baby boy called Oliver James and they are both doing well. Oliver was born on 21st Feb and is keeping his mum Joanne and Dad Ian very busy!

The new Indian tea is now available so those of you who love the First Flush Assam can refill your cupboards!
